Flaxseed Banana Oat Muffins

Flaxseed Banana Oat Muffins (Serves 5)

Ingredients

  • 130g rolled oats
  • 150g ripe bananas
  • 1 egg
  • 40g flaxseed meal
  • 50g walnuts, chopped
  • 100ml unsweetened almond milk
  • 2 tsp. baking powder
  • 1 tsp. cinnamon
  • 1/3 tsp. stevia granulesMethod
  1. Pre-heat oven to 180 degrees and prepare a muffin tray by lining 5 muffin cases in the tray
  2. Mash the bananas with a fork in a large bowl. Add the oats, flaxseed meal, baking powder, cinnamon, stevia and walnuts
  3. Crack the egg into a separate bowl and whisk. Mix in the almond milk
  4. Pour the liquid into the bowl of dry ingredients and combine well
  5. Pour the muffin mixture into 5 small-medium sized muffin cases. Bake the flaxseedbanana oat muffins for 20 minutes or until cooked in the center. Once cooked allow tocool for 5 minutes before serving 1 muffin
  6. Refrigerate the remaining 4 muffins to be consumed over the week
