Flaxseed Banana Oat Muffins (Serves 5)
Ingredients
- 130g rolled oats
- 150g ripe bananas
- 1 egg
- 40g flaxseed meal
- 50g walnuts, chopped
- 100ml unsweetened almond milk
- 2 tsp. baking powder
- 1 tsp. cinnamon
- 1/3 tsp. stevia granulesMethod
- Pre-heat oven to 180 degrees and prepare a muffin tray by lining 5 muffin cases in the tray
- Mash the bananas with a fork in a large bowl. Add the oats, flaxseed meal, baking powder, cinnamon, stevia and walnuts
- Crack the egg into a separate bowl and whisk. Mix in the almond milk
- Pour the liquid into the bowl of dry ingredients and combine well
- Pour the muffin mixture into 5 small-medium sized muffin cases. Bake the flaxseedbanana oat muffins for 20 minutes or until cooked in the center. Once cooked allow tocool for 5 minutes before serving 1 muffin
- Refrigerate the remaining 4 muffins to be consumed over the week
