Brown Rice, Chicken & Greens (Serves 2)
Ingredients
- 115g (M) / 75g (F) uncooked brown rice
- 300g (M) / 200g (F) raw, chicken breast, chopped
- 1 garlic clove, crushed
- 1 tsp. turmeric powder
- 5ml extra virgin olive oilAlkalising Greens
- 100g kale, chopped
- 100g baby spinach leaves, chopped
- 50g brown onion, diced
- 1 garlic clove, crushed
- 1 tsp. grated ginger
- 5ml extra virgin olive oilMethod
- Boil 700ml of water in a saucepan over medium temperature and cook the brown rice for 25-30 minutes. Season with Himalayan salt and pepper
- To cook the chicken, heat olive oil in a non-stick fry pan over medium temperature and add the chicken breast to the fry pan with turmeric, and 1 crushed garlic clove. Cook the chicken for 3-4 minutes, on each side or until cooked in the center
- To cook the alkalising greens, heat olive oil in a separate non-stick fry pan over medium temperature, and saute the onion, spinach and kale with garlic and ginger for 7 minutes or until the spinach and kale wilts
- Divide the alkalising greens, brown rice and chicken into two meals
- Dish one serving of the alkalising greens, brown rice and chicken and refrigerate the second meal for tomorrow’s leftover
